Abstract: | This chapter on food preferences and nutrition of the people of the Sudan first examines the national production of cereals, sugar, oils and other protein sources. The food processing industry in the Sudan is doomed to fail if crop-related constraints, technical aspects, and marketing systems are not carefully revised. The performance of the food industry in the Sudan must surely affect the patterns of food consumption and it also reflects on the eating habits and preferences of the Sudanese people. An examination of food preferences and habits of food consumption in the Sudan shows that the fact that the Sudan is inhabited by various ethnic groups manifests itself in the traditional practices and taboos of food preparation. Cereal-based food constitutes the major portion of the Sudanese diet. Next, the author defines some of the traditional foods, describes their methods of preparation and the specific occasions when they are used. Attention is paid to 'kissra', 'assida', 'gurrassa', stew and sauce preparations, milk and dairy products, and nonalcoholic and alcoholic beverages. In conclusion, factors contributing to nutritional deficiencies in the Sudanese diet are considered. Bibliogr. |
